The downside to having all these boys in my house is that they want a LOT of meat. And, meat is not cheap, especially in Alaska where a pound of ground beef is around $3.50 per pound at the warehouse stores and more at the local grocery stores. So, when they start clambering for more of something (like their favorite meatloaf), I start looking for was to stretch out the meal. Last night I decided to make a twist on beef tips and noodles using meatloaf leftovers that were around a pound in total.

Now, you can do this with slices of leftover steak as well. I just happened to have meatloaf in the house. Both work and help fill those hungry bellies. I do wish I’d had a full pound of mixed vegetables, but it worked fine as is.
As you can see, I prepped the parts while the egg noodles were cooking. Then it was a matter of dump and mix.
