I thought it might be fun to highlight the recipe posts on the blog and how many views they received this year. Enjoy our reader’s favorite recipe posts during 2012!
Mexican Chicken and Rice Casserole
This is the favorite of the year with 1,358 views during 2012.

Eggplant Parmesan
I love this meatless dish, especially during Lent. In 2012, there were 994 views of the post.

Pizzelles
We didn’t make any before Christmas, but the boys and I want to experiment with these and see if we can make tiny ice cream cones. In 2012, there were 160 views.

Pumpkin Chocolate Chip Muffins
This is a family favorite and with a stock up on pumpkin with clearance pricing at Costco last week I’ll be feeding the boys this plenty during the cold weather months. In 2012, there were 141 views of this post.

Chocolate Chip and Almond Flax Cookies
This healthier cookie recipe tied with the Chocolate Chip Pumpkin muffins with 141 views in 2012.

Hearty Meatloaf
For a few of the boys, this is the requested main dish for their birthday dinner. I do like to change things around here and there as well as occasionally adding shredded veggies to boost the nutrition. This older post had 89 views in 2012.

You had me doing a double take. It’s hearty not honey meatloaf that I shared. Although, you’ve now got me thinking about how a honey ham loaf could be rather yummy.

LOL sorry about that and I looked at the title twice too! I should drink my morning cup of coffee before browsing blogs. I followed your link and bookmarked and pinned it so I’d have the recipe. I would have wondered where the honey went when trying it.
I’m thinking we are on to something with the honey though so if you try it before me then let me know and I will do the same.

That’d be a great surprise, Sarah. I’d recommend buying a small eggplant and making a small amount if he’s the only one who’d be eating. While you can reheat leftovers, it’s just not as good a few days after fixing it.

I have to admit that I have never cooked eggplant myself before. I think that will be something I try this year!

For something like the eggplant parmesan, just make sure you ‘sweat’ the eggplant by salting it. Otherwise, it’s not that hard to cook.

My boys love it and you can tweak the amount of salsa and cheese to your taste. I’ve also made a taco casserole that’s a similar idea, only with seasoned beef and crushed tortilla chips. (I need to share that one this spring, too!)

I like the pumpkin chocolate chip muffins and meatloaf recipes most. I LOVE food blogs and cooking reality shows but, yes, they are dangerous.
Next on my list is getting a slow cooker. I recently found a great site for crockpot recipes.

I absolutely LOVE my slow cooker as it helps me get a good dinner on the table quite often. I especially love using it when the weather is hot and you don’t want to heat the kitchen.

I love recipe posts so much. A fantastic recipe (maybe not if you’re on a diet) is mini mac n cheese bites. I discovered these 2 weeks ago while trying to figure out New Year’s Eve appetizers.
You can can easily modify them too: add breadcrumbs or bacon, change the cheeses a little. Delicious.
