Gluten Free Quiche: Spam and Cheese
This Spam and Cheese Quiche is gluten free (naturally!) and a hit with the kids.
Several years ago, I shared about making our Crowd Pleasing Hashbrown Crust Quiche. Little did I know that a gluten-free quiche crust option would become a staple in my house.
This dish has been something we’ve continued to make because it is gluten free and delicious.
The boys now all have nights when they are responsible for cooking dinner. My youngest gets in a rut with mac and cheese, so I sometimes come up with the dish and help him make it.

Making a Gluten Free Quiche with a Hashbrown Crust
The crust is so simple and can be made from your pantry easily if you have dehydrated potato shreds (aka hashbrown potatoes.)
We have found that a large (12 inch) cast-iron skillet is the perfect vessel for this dish.
We bought this set of skillets years ago and love them!
I did notice that Lodge now makes a 17 Inch Ergonomic Frying Pan which would be great when making this for a crowd. (You will need to add to the amounts listed.)
You can use the skillet on the stovetop to saute desired vegetables (e.g. onions and green pepper) as well as any meat (e.g. the spam in this dish.)
Then, use it to melt the butter and then mix in the rehydrated potato shreds.
Pressing down and up the sides finishes the preparation of the skillet. A short bake helps to firm it all up.
Then the egg mixture is whipped together in a bowl to pour onto the baked crust.
Gluten Free Quiche: Spam and Cheese with Hashbrown Crust
Spam and cheese meld in this quiche with a hashbrown crust for a delightful main dish.
Ingredients
Hashbrown Crust
- 3 cups dehydrated potato shreds
- 3 Tbsp. Butter
- 1/8 tsp. salt
- 1/8 tsp. ground pepper
Spam and Cheese Quiche Filling
- 1 Tbsp butter
- 1 or 2 green pepper, diced
- 1/2 large onion, diced
- 1 can Spam, diced
- 10 large eggs
- 1 1/2 cups shredded cheddar cheese
- 1 Tbsp. dried Parsley
- 1 tsp. dried basil
- 1/3 cup milk
Instructions
Rehydration of Hash Browns
In a large bowl, add the 3 cups of dehydrated potatoe shreds and 3 cups of boiling hot water.
Stir with a utensil and cover with a lid. Use this time to start prepping the filling.
Initial Filling Prep
In a cast-iron skillet, melt 1 Tbsp. butter.
Add the onion and green pepper, sauteing for about 5 minutes.
Add diced Spam and sautee until slightly crisp on the edges.
Put into a bowl and set aside.
Hashbrown Crust
After 15 minutes, the potatoes are ready for making the crust.
In the skillet, melt the remaining butter. Toss in the rehydrated potatoes along with the salt and pepper.
Press up sides and across the bottom of the skillet.
Bake at 350 degrees for 15 minutes.
Finalize Spam and Cheese Filling
When the crust is ready to fill, crack eggs into a bowl, whisking to homogenized.
To the eggs, add the milk, seasonings, sauteed vegetables and Spam, and shredded cheese.
Pour on top of the prebaked hash brown crust.
Bake at 350 degrees for 25 to 30 minutes.
When browned on top, remove and allow to sit for 5 minutes before slicing to serve.
Notes
While we prefer butter, you can use an alternative oil for sauteeing the vegetables. Coconut oil (refined) would be a good substitute and might work for the crust as well.

If you are having this with many other items, then you may be able to get 12 slices out of it. But, for the main dish, I cut the quiche into 6 slices.

Now for my ‘true confession’ time…
I am NOT a Spam fan.
But, I really enjoyed this quiche.

Some fresh fruit would be perfect for this quiche, especially in the form of a fruit salad.
