Coffee Infused Recipes Using International Delight Light Iced Coffee

Like many moms I know, I enjoy coffee. 

However, I’m not a plain coffee gal who likes to drink it straight up. 

Rather, I like all the possible yummy concoctions you can get at coffee houses or make at home (hubby calls them milkshakes and glorified hot chocolates!) 

But, there are times when the calories really add up and then I go on a fast from the drinks. 

Thankfully, there are easy ways to get lower calories with great taste. 

International Delight Light Iced Coffee is now on my go-to list for a quick coffee fix at a cost far less than the coffee house.

Now, I had heard via the blogosphere that International Delight was releasing their iced coffee in both vanilla and mocha flavors this year at a reduced-calorie point than the original products which came out last year. 

I must admit that some ‘diet’ versions of a favorite item can leave a lot to be desired (and some of them leave you with a nasty aftertaste!) 

While I was excited to test taste International Delight Light Iced Coffee and see that I could pick it up at our local Walmart (check out my shopping trip),

I was a bit nervous about how it would taste straight up.  I ‘sampled’ it straight along with a few of my coffee-loving boys and we all gave it a thumbs up for the taste.

With only 100 calories per serving, this is one indulgence I can easily work into my normal diet without any guilt. There’s plenty of sweetness in these beverages and I definitely agree that they feel creamy in your mouth.

 

International Delight Light Iced Coffee Frappuccino

I decided to not just stop there with seeing how we could incorporate this new product into our lives.

First stop was to ‘shake’ things up into more of a Frappuccino style drink, something my boys love to get on special occasions. 

Even though we live in the cold climate of Alaska, we still love to have something cold year-round.

 

I did discover that this drink froths up quickly and tasted a bit better when I added a bit of unsweetened cocoa powder. 

An alternative for keeping it full strength is to freeze some of the beverage in an ice cube tray and use those in your blender.

The boys enjoyed a little chocolate whipped cream on top while I kept mine more purist. 

I’m considering trying it with some ground flaxseed and my meal replacement powder which would make it a full meal.

  1. I never thought of using coffee flavored creamers for recipes, sounds great. I would love to mix it in ice cream now that the weather is hot outside

  2. I love making coffee flavored breads and desserts. I have never purchased International Delight Iced Coffee but I think I just might so I can try some of these desserts. Thank you for the yummy recipes.

  3. Wow, Laura! You and the boys were really busy in the kitchen testing out ID’s Light Iced Coffee — love it! Too bad we’re so far away… I’d love a muffin right now!!

    1. I figured that they probably did a LOT of taste testing before launching the light versions, Mallery. But, every so often I’ve encountered a light version of a product that really fell short. So nice to have this one taste great.

  5. I think I just drooled a little over that parfait! Anything with coffee in it is okay by me. In fact, I’m dragging so bad right now, I would kill for any one of those delicious treats.

      I’ve definitely had fun experimenting with the product. And, I can do a frappucino plus the muffins for less expense (and calories) than one of the many of the coffee house drinks we love.
