Coffee Infused Recipes Using International Delight Light Iced Coffee

Creating a Parfait with International Delight Light Iced Coffee

Seeing that they liked the flavor of mocha and knowing I wanted to try out some possible desserts for special date nights, we went with a Coffee House Chocolate Strawberry Parfait. 

 

I had picked up the sugar-free pudding for this dish. But, I quickly realized that it was not enough to stretch for all the boys. 

As I had some regular chocolate fudge pudding in the cupboard I used that with the International Delight Light Iced Coffee taking the place of the milk.  

The final consistency was a little less dense than usual pudding, so I’d recommend using less of the International Delight Light Iced Coffee if you want it thick. 

We also had some ‘hands-on’ chemistry learning when we made the angel food cake from a mix and they saw it quickly expand in volume. 

All of the boys loved the combination of angel food cake, mocha pudding, and strawberries as did I.  While I plated individual servings, this could be made in a trifle bowl for a dinner party where many guests will be enjoying the dessert.

Coffee House Chocolate Strawberry Parfait

Ingredients

  • 1 angel food cake
  • 1 large package chocolate pudding
  • 3 cups International Delight Light Iced Coffee in mocha flavor
  • 1 lb. strawberries, washed and sliced
  • 6 Tbsp. room temperature butter
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup plus 2 Tbsp International Delight Light Iced Coffee
  • 1/8 tsp pure vanilla extract
  • 2 cups all purpose or pastry flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 3/4 cup chocolate chips
  • 1/2 cup pecans, chopped

Instructions

  1. Prepare angel food cake per box instructions or use a pre-baked one from the bakery. Once cooled, cut into cubes.
  2. Mix the pudding mix into the mocha flavored International Delight Light Iced Coffee using a whisk or beater for 2 minutes. Cover adn put into the refregerator for at least 5 minutes to set up.
  3. In a trifle bowl, create a layer of angel food cake cubes. Top with a third of the prepared pudding followed by sliced strawberries. Repeat twice to fill the bowl. You can top it all off with whipped cream if desired.
  4. Preheat your oven to 350 degrees and prepare the muffin tin by either spraying or placing a paper liner into the individual cups.
  5. Cream together the sugar and butter until blended, then add in the egg, International Delight Light Iced Coffee and vanilla extract. The resulting mixture will be a little on the lumpy side.
  6. In a separate bowl, mix together the flour, baking powder, baking soda and ground cinnamon.
  7. Pour the wet ingredients into the flour blend and then use a folding motion to mix together until just mixed. Add in the chocolate chips and pecans, folding just long enough to mix.
  8. Spoon just shy of 1/3 cup of batter per muffin cup. Bake at 350 degrees for 30 to 35 minutes.
  9. After baking, allow the muffins to cool for at least 15 minutes before serving.

Notes

Use less International Delight Light Iced Coffee for a thicker consistency if desired.

I used freshly ground soft whole wheat berries for my pastry flour. For an added boost of nutrition, add a few Tbsp. of ground flax seed to the wet ingredients.


 

Overall I am quite pleased with International Delight’s new Light Iced Coffee just as I already love their creamers for hot coffee.  Why not try it for yourself?

    1. I figured that they probably did a LOT of taste testing before launching the light versions, Mallery. But, every so often I’ve encountered a light version of a product that really fell short. So nice to have this one taste great.

  5. I think I just drooled a little over that parfait! Anything with coffee in it is okay by me. In fact, I’m dragging so bad right now, I would kill for any one of those delicious treats.

      I’ve definitely had fun experimenting with the product. And, I can do a frappucino plus the muffins for less expense (and calories) than one of the many of the coffee house drinks we love.
