Creating a Parfait with International Delight Light Iced Coffee
Seeing that they liked the flavor of mocha and knowing I wanted to try out some possible desserts for special date nights, we went with a Coffee House Chocolate Strawberry Parfait.
I had picked up sugar free pudding for this dish, but quickly realized that it was not enough to stretch for all the boys. As I had some regular chocolate fudge pudding in the cupboard I used that with the International Delight Light Iced Coffee taking the place of the milk. The final consistency was a little less dense than usual pudding, so I’d recommend using less of the International Delight Light Iced Coffee if you want it thick. We also had some ‘hands on’ chemistry learning when we made the angel food cake from a mix and they saw it quickly expand in volume. All of the boys loved the combination of angel food cake, mocha pudding and strawberries as did I. While I plated individual servings, this could be made in a trifle bowl for a dinner party where many guests will be enjoying the dessert.
Use less International Delight Light Iced Coffee for a thicker consistency if desired. I used freshly ground soft whole wheat berries for my pastry flour. For an added boost of nutrition, add a few Tbsp. of ground flax seed to the wet ingredients.

Overall I am quite pleased with International Delight’s new Light Iced Coffee just as I already love their creamers for hot coffee. Why not try it for yourself?
