Easy Beef Fajitas for a Quick Dinner

We love to eat peppers in our house. Whether it is adding green peppers for a little bite to a dish, the colored mini peppers sliced for a salad, or the small, hot peppers to add a little spice, you’ll find them in our family’s diet practically every day. They even taste great raw for a snack! And, one dish for peppers that we love is our Easy Beef Fajitas.
A few years back, I was salivating over a friend’s post on Facebook about her fajitas. When I shared that I longed to make them at home rather than waiting for the opportunity to eat out at a local Mexican restaurant. A week later there was an envelope from her containing her ‘secret’ recipe…McCormick’s Grill Mates Chipotle Pepper Marinade.
Now we can enjoy fajitas (beef, chicken or shrimp all work) whenever the mood strikes in the house. All we do is slice up leftover meat (if beef or chicken), onion, and peppers and we are ready to go. Could I make my own spice mix? Probably…but, why go that route when this one is even easier.
Making Easy Beef Fajitas
Easy Beef Fajitas for a Quick Dinner
Ingredients
- 1 lb. precooked steak (or other beef cut that can be sliced)
- 1/2 onion
- 1/2 green pepper or several smaller peppers
- 2 to 3 Tbsp. McCormick’s Grill Mates Chipotle Pepper Marinade
- water
- tortillas
Instructions
- Slice up all ingredients (beef, onions, and peppers)
- Heat skillet then add onions and peppers, cooking until tender.
- Add sliced steak, stirring and cooking for a minute.
- Add seasoning mix (adjust for taste) and a little water. Simmer for a few minutes for flavors to meld.
- Serve on tortillas.
Notes
While this recipe showcases using leftover steak, you can also use chicken pieces. If cooking from raw with chicken, I'd put some seasoning into the pan while cooking the chicken. Then, remove to a plate to cook the onions and peppers and follow as written above.
If you want to make shrimp fajitas, do NOT precook the shrimp. Instead, add the raw shrimp before the onions and peppers have fully cooked. Go ahead and add the seasoning at that point and then cook until the shrimp have all turned pink.
