Gluten Free Chocolate Chip Oatmeal Cookies With Coconut

Chocolate chip cookies are a favorite for many people. Even better when you can add some key ingredients that are “better for you.” Like these Gluten-Free Chocolate Chip Oatmeal Cookies with Coconut.
Featured Ingredient: Tropical Traditions Gold Label Virgin Coconut Oil
Earlier this month, we were sent a quart-sized jar of Tropical Traditions Coconut Oil from Healthy Traditions to review. Specifically, we received the Gold Label Virgin option.
I had recently started using some coconut oil for popping popcorn and in bread recipes. However, that was the non-virgin stuff and I was curious how this one compared.
While the lower grade coconut oil has no discernable odor, there is no question when you open up the jar of the Gold Label that this IS coconut.
You get both the aroma and can see some flakes of coconut in it.
Tropical Traditions has a nice video on their website about how the owners discovered Virgin Coconut Oil. Rather than reiterate what is already on their site, I’d recommend taking a look.
I looked on the Tropical Traditions website for a recipe to test out this product. They have several recipes that use their products on that page.
After a bit of deliberating, I decided upon chocolate chip oatmeal cookies.
Making Chocolate Chip Oatmeal Cookies With Coconut

The recipe was a little different as it was egg-free.
Deferring to Mr. O’s preference, we did almond extract instead of vanilla and almonds instead of walnuts.
The dough is sparse with tons of chocolate chips. But, the result was nice.
Organic Gluten-Free Coconut Flour

While the flavor is not overwhelming, there is a discernable coconut taste in the cookies.
Mr. O is not a big fan of coconut, so he only sampled one cookie before deciding it wasn’t for him.
But, the boys have been gobbling them up! I’m now considering what other recipes could utilize the subtle coconut flavor that comes from this oil.
Gluten Free Chocolate Chip Cookies
Ingredients
- 1/2 cup virgin coconut oil, melted
- 1/2 cup whole cane sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 1/8 teaspoon salt
- 1 cup coconut flour
- 1/2 shredded coconut
- 3/4 cup chocolate chips
Instructions
- Preheat oven to 375° F.
- Combine the coconut oil, sugar, vanilla, eggs and salt in one bowl. Add coconut flour, shredded coconut and chocolate chips, mix together.
- Make small cookie balls and place on a parchment-lined baking sheet.
- Bake for 12-15 minutes, or until cookies start to brown.
