Southwestern Goulash

I have been, or can be if you click on a link and make a purchase, compensated via a cash payment, gift, or something else of value for writing this post. Regardless, I only recommend products or services I use personally and believe will be good for my readers.

My son’s favorite dish he learned to make at the Kids in the Kitchen class was called Southwestern Goulash.

In many ways, it reminded me of a chili mac that was heavier on meat and missing the cheese.

We decided to modify the dish a bit from the original recipe.

Partly to help stretch the meat out (which is the most expensive part of the dish.)

But, also to include a few different items in the dish to really expand the flavors.

Making Southwestern Goulash

The original recipe came from (Amazon affiliate link) Taste of Home Cookbook, 3rd Edition: Best Loved Classics and All-New Favorites.

Our modifications included:

doubling the pasta and corn
increasing the tomatoes
adding black beans.

The addition of pasta helps to stretch it out when there are 4 hungry boys wanting to eat volume.

The tomatoes and corn are needed to increase the sauce for the dish.

And, black beans add another layer of flavor while also helping to boost the protein.

  • 2 cloves garlic, diced
  • 2 cans (28 ounce) diced tomatoes, undrained

  • 1 tsp ground cumin
  • 1 tsp ground pepper
  • 1/4 tsp salt
  • 1/4 cup minced cilantro

  2. Prepare the elbow macaroni according to package directions. When cooked, drain and then add to the meat mixture. Stir in cilantro and finish heating thoroughly.

Yum, yum, and yum!

For kids that like cheese, you can top with some cheddar or even a sprinkle of Parmesan.

Speaking of yumminess…have you discovered Yummly yet?

If you look at the share bar to the left of the post you’ll see the icon (Yum) for saving a recipe to that platform.  I love that it pulls the ingredient list over and then calculates out the calorie count for each recipe.  Plus you can categorize the recipes you’ve yummed to easily find them later.  Based on what you yum, you will have recipe suggestions shared with you, too.

All of the recipes from Day by Day in Our World which have been yummed so far can be found on the Day by Day in Our World Yummly page.

Don’t forget to yum your favorites from here, too!
