Life in Alaska means colder temperatures for much of the year. After a morning cup of joe, I like to switch over to tea for my warm beverage of choice. I especially like to enjoy a cup of tea with a small snack in the mid-morning or mid-afternoon. While a regular black tea can be perfect on a cold winter day, I really like to experiment with different flavors and expand my options. A Lemon Ginger Tea Muffin is one of my go-to snack items that I decided to make to not only compliment the tea, but incorporate it.
Given my propensity for tea, I was tickled to see that Lipton has added several new black, herbal and green teas to their product lineup. I was especially thankful that I could find many of them at our local Walmart. Even my boys can get a bit vocal about which variety they want to try next.

Now I will admit that I have found very few green teas that I can tolerate, let alone really like. Yes, I know all about the health benefits and have a few relatives that remind us all about it whenever they can. But, if you can’t get past the taste then it just isn’t going to happen. Lipton’s updated green teas promise to have a light, fresh taste, bright clearer color and delightful aroma. Pairing the basic green tea with the fruity flavor of pomegranate is what has me now a convert.

Make a Lemon Ginger Tea Muffin
This Lemon Ginger Tea Muffin uses the base of the Trim Healthy Mama Frosted Cinnamon Muffin in a Mug recipe, with some changes that lighten the texture and flavor. My younger boys have tasted the original and commented that the cinnamon can be overpowering. With the new Lipton Lemon Ginger Herbal Tea in the house, I thought it was time to jazz things up and go for a lemon flavor.
Now that I know the boys are enjoying this muffin (without the icing!), I need to whip up a larger batch in the oven so snack time is covered. Can you imagine how wonderful the house will smell with the scents of ginger and lemon?
My only choice will be what book to grab for a quick reading break while enjoying my tea.
