Life in Alaska means colder temperatures for much of the year.
After a morning cup of joe, I like to switch over to tea for my warm beverage of choice. I especially like to enjoy a cup of tea with a small snack in the mid-morning or mid-afternoon.
While regular black tea can be perfect on a cold winter day, I really like to experiment with different flavors and expand my options.
A Lemon Ginger Tea Muffin is one of my go-to snack items that I decided to make to not only compliment the tea but incorporate it.

Given my propensity for tea, I was tickled to see that Lipton has added several new black, herbal and green teas to their product lineup.
I was especially thankful that I could find many of them at our local Walmart. Even my boys can get a bit vocal about which variety they want to try next.

Now I will admit that I have found very few green teas that I can tolerate, let alone really like.
Yes, I know all about the health benefits and have a few relatives that remind us all about it whenever they can. But, if you can’t get past the taste then it just isn’t going to happen.
Lipton’s updated green teas promise to have a light, fresh taste, bright clearer color, and delightful aroma. Pairing the basic green tea with the fruity flavor of pomegranate is what has me now a convert.
Like many parents, my days can be jam-packed of tasks to do.
Sometimes I feel like my wheels are spinning with no traction, especially mid-morning or mid-afternoon. When that feeling hits, I know it is time to take a quick tea break and enjoy a cup to soothe my soul.
Enjoying a small snack to help fuel my body is another part of my tea time ritual.
Since a recent visit to the doctor’s office, I have been adapting my diet to not only include more fruits and vegetables but also to (hopefully temporarily!) cut as much gluten out of my diet as possible.
In a house full of carb lovers, that is a tough task!
It also meant finding different ways to make my beloved baked goods to savor with a soothing cup of tea.
Make a Lemon Ginger Tea Muffin

This Lemon Ginger Tea Muffin uses the base of the Trim Healthy Mama Frosted Cinnamon Muffin in a Mug recipe, with some changes that lighten the texture and flavor.
My younger boys have tasted the original and commented that the cinnamon can be overpowering.
With the new Lipton Lemon Ginger Herbal Tea in the house, I thought it was time to jazz things up and go for a lemon flavor.
Lemon Ginger Tea Muffin
Gluten Free muffin made in a mug (or you can bake a larger batch in the oven!)
Ingredients
- 1 egg
- 2 Tbsp. flax seed meal (I make this fresh using a coffee mill)
- 1 Tbsp. coconut flour (or sub 2 more Tbsp. of golden flax or almond flour)
- 2 Tbsp. Strongly brewed Lemon Ginger Tea
- 1 T. butter or coconut oil
- scant 1/2 tsp. ground ginger
- pinch of salt
- 3 tsp Stevia Blend, or your sweetener to taste
- 1/2 tsp. baking powder
- 1 -2 drops lemon essential oil
- Lemon Ginger Frosting:
- 2 Tbsp. non-fat Greek Yogurt
- 1 Tbsp. cream cheese
- shake of stevia or other sweetener to taste
- 1 tsp. Lemon Ginger tea
- 1 drop Lemon essential oil (optional)
Instructions
- In a mug, pour 1/4 cup of hot water and then place the tea bag in it to steep 10 minutes.
- In a large mug, crack one egg and beat well.
- Add the flax seed meal, coconut flour, 2 Tbsp of steeped tea, 1 Tbsp. butter or coconut oil, ginger, pinch of salt, Stevia Blend, baking powder and lemon essential oil.
- Mix well and microwave on high for 1 minute. (Alternatively, spoon into a ramekin or 2 or 3 muffin cups and bake at 350 degrees for 10 minutes.)
- Remove the muffin from the mug and allow to stand for a few minutes while you make the optional frosting.
- Lemon Ginger Frosting
- In a small bowl, mix together the yogurt, cream cheese, tea, sweetener and optional lemon essential oil.
- After the muffiin has cooled for a few minutes, frost with the icing.
Now that I know the boys are enjoying this muffin (without the icing!), I need to whip up a larger batch in the oven so snack time is covered.
Can you imagine how wonderful the house will smell with the scents of ginger and lemon?
My only choice will be what book to grab for a quick reading break while enjoying my tea.

I have been wanting to try incorporating coconut flour more and to stay away from white flour. I love that you made this in the cup! I think my kids would love making muffins in cups too. Ginger and lemon are so great for the digestion too.
I adore the combination of ginger and lemon for digestion issues. Bonus is that it tastes great as well.
Coconut flour is new to me as well. I’ve used coconut oil for years, but a recent diagnosis has me trying gluten free for a short while to let my gut heal. Lucky for me, you can easily be gluten free when following Trim Healthy Mama.
My mother-in-law loves tea! This is the perfect pastry to go along with it!
We went to a tea party a few weeks back, and it was so lovely. I haven’t been to one since my daughter was serving imaginary tea. These muffins sound delicious, and would be perfect for an afternoon with my friends.

I have this tea in the pantry and I am actually drinking a cup iced. I prefer it iced and wish I had one of these muffins to go with it!
I can see where it would be phenomenal as an iced tea. I’m just too cold up here in Alaska right now to have it that way!
I can never make mug cakes successfully. How sad is that? Hahaha. I swear it must be my microwave. But I’m totally going to give this one a go because of the tea addition 🙂
I had to play with what mug or bowl I am using. Some do better than others for cooking. Honestly, since the boys liked this muffin I’m going to bake up batches and then warm up when ready.
