Skip buying canned beans at the store and make these Baked Beans with Bacon made in a slow cooker.

Whether it is for summer gatherings or just to compliment hot dogs cooked on the grill, baked beans are a staple in our house.

The boys would love to be lazy and eat them from a can all the time.

Why not regain control of your ingredients and make it at home?

Hearty Baked Beans with Bacon ready to eat

While this recipe uses canned plain beans, you can make it using beans you’ve cooked from dried.

It takes a little longer to do.

But, I will make up large batches of plain beans (especially black ones) to use for future cooking adventures.

Ingredients

  • 16-oz. thick-cut bacon, cut into small pieces
  • 1 medium sweet onion, chopped
  • Sea salt and black pepper, to taste
  • 1 15.5-oz. can red kidney beans, drained and rinsed
  • 1 15.5-oz. can dark red kidney beans, drained and rinsed
  • 2 15.5-oz. cans great northern beans, drained and rinsed
  • 2 15-oz. cans black beans, drained and rinsed
  • 6 oz. tomato paste
  • 2 T. sugar-free Dijon mustard
  • 1/4 t. gluten-free liquid smoke
  • 1 c. real maple syrup
  • 2 c. chicken broth, preferably organic

Instructions

    1. Add chopped bacon and onion to a large skillet. I prefer cast iron.
    2. Season with salt and black pepper, to taste, and cook over medium heat until bacon starts to get crispy and the onion is soft. This will take approximately 10-15 minutes.
    3. Remove skillet from heat, carefully drain any excess grease, and then set aside.
    4. Add the beans, bacon, and onion to a 6-quart or larger slow cooker crock.
    5. Top with the tomato paste, Dijon mustard, liquid smoke, maple syrup, and chicken broth. Stir to combine.
    6. Cover and cook on high for 4 hours or on low for 8 hours.
    7. Taste and season with additional salt and black pepper, if desired, before serving. Enjoy!
