Summer is kicking off with Memorial Day this coming Monday here in the United States.  That means potlucks are going to be happening, whether for your extended family, friends, or at a local organization.  Our parish hosts potlucks for the three major summer holidays: Memorial Day, 4th of July and Labor Day.  That means I have 3 opportunities to bring awesome side dishes to share.

To prepare for next week, I started gathering ideas from several of my fellow bloggers.  Today’s theme is potatoes, whether a traditional cold potato salad or something a little different.  All of these would make a wonderful dish to share.

Attend any picnic during the summertime and you are quite likely to find a cold potato salad. This is a dish which goes well with grilled staples like hamburgers and hot dogs as well as fried chicken. Somehow a potluck in the summer at our church just isn’t ‘right’ without at least one bowl of potato salad on the table.

While a cold potato salad might be expected during the summer months, there is no hard and fast rule that you can’t shake things up a little with a hot dish featuring potatoes instead.
