My boys love to eat. Seriously! They are sometimes like Hobbits with their breakfast, 2nd breakfast (aka morning snack), etc. When they hit a growth spurt, I find that they are trying to raid the kitchen almost hourly.
When it comes time to dinner, I like to find recipes that are easy to make and fill up their bellies. Mexican themed dinners tend to do just that. While tacos are a mainstay for easy Mexican, I like to change things up now and then. These Chicken Taco Casseroles (shown as individual servings) are perfect for this.
If you like to plan ahead, making a large batch of shredded or cubed chicken will make the process of making the Individual Chicken Taco Casseroles easy and quick.
Roasting the corn first will help with a depth of flavor.
Gather the ingredients into individual containers if you will be assembling multiple casseroles.

What I like about the individual serving size is that I can make one per child and then have them fill up on other things like salsa & chips or salad. Beans are another favorite side dish for Mexican inspired dinners in our house. We’ve enjoyed experimenting with refried beans mixed with plain black beans as well as making homemade Mexican Baked Beans.
With each person having an individual container for the main dish there can be no posturing over who should have seconds.
Alternatively, you could multiply everything by 8 or 10 and make the dish lasagna style in a casserole dish. That would also make it a great potluck dish to pass.
Corn, chicken, salsa, and cheese meld together to create a taste sensation in your mouth.
Recipe for Individual Chicken Taco Casseroles
- 1/4 Cup cooked chicken breast ( I like to cook it over a skillet with 1 tsp adobo and 1 Tsp lime juice until done)
- 1/4 Cup corn
- 1/4 Cup shredded cheese
- 1/4 Cup salsa
- 2 Flour tortillas
- Cilantro to taste
- Preheat the oven to 350 degrees.
- In individual baking dishes or small casserole place the 2 flour tortillas so they overlap. Add the salsa, chicken, corn, and shredded cheese.
- Take to the oven and bake for 15 minutes or until the cheese is melted and bubbly.
- Top with cilantro. Serve and enjoy
To make this a full “Mexican Fiesta” serve the table with some chips and salsa or guacamole as appetizers. You can also make a batch in a big casserole and cut it like lasagna.
