Veggie Lover Egg Scramble
This Veggie Lover Egg Scramble is a great dish for breakfast, brunch or breakfast for dinner.

Tomatoes are a favorite vegetable of mine to eat.
Or is a favorite fruit to eat?
To-MAY-Toe or To-ma-Toe; fruit or vegetable, it makes no difference to me!
Maybe it’s my Italian heritage that longs for a juicy tomato paired with fresh mozzarella.
Or, it could be the experience of growing up in the deep South and enjoying a ripe Creole tomato purchased at the local farmer’s market.
Whether it’s my nature or from the experiences as a child, I am in love with tomatoes of all colors, shapes and sizes.

Now, as much as I adore farmer’s markets, the price of a locally grown tomato (especially if organic) is just plain outrageous here in Alaska.
Granted, they are harder to grow given the shorter season and my attempts the past 2 years left a lot to be desired. But, I still can’t justify paying up to $12.50 per pound for them.
That means I’m at the mercy of the local grocery stores and warehouse stores (e.g. Costco and Sam’s Club) with the knowledge that much of the produce you purchase is well on its way to being rotten when you buy it.
I absolutely adore eating a tomato alongside my eggs or in an omelet for Sunday brunch.
I find that it helps to ‘lighten’ the calorie count of my plate as the boys tend to want dense things like biscuits, cinnamon rolls, or pancakes to fill them up.
One recent Sunday morning, I decided to make a scramble for the family instead of doing omelets.
It was a hit with everyone and a few of the boys were disappointed that there wasn’t enough for seconds!
Creating Veggie Lover Egg Scramble

This is an easy to make dish that you can customize a bit based on what you have on hand and what your family likes.
My husband recommended my using mushrooms another time and with that I’d probably switch to a Swiss cheese.
The boys are not fans of mushrooms, so that’s for a couple only meal.
Most of the photos here show my successful run which included diced ham as I have a house of meat lovers.
But, you can easily kick that out and still have a rather tasty dish or use another meat such as bacon or sausage that you’ve already cooked.
Truly, this can be an everything but the kitchen sink kind of recipe.
Veggie Lover Egg Scramble
Dice up several vegetables to cook with eggs. A quick and easy dish for any meal!
Ingredients
- 1 dozen eggs
- 1 cup diced ham (optional)
- 1/2 to 1 cup diced onions
- 1/2 to 1 cup diced peppers
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- 2 cups spinach
Instructions
- Season your skillet as desired (spray for a nonstick or we use butter for a cast iron pan.)
- Over medium heat, cook the diced ham, onion and peppers for several minutes.
- While that is cooking, beat together the dozen eggs in a mixing bowl with a little water or milk added to them.
- Once the onion has started to turn translucent, add the eggs to the pan stirring frequently.
- When the eggs are still rather wet, add the shredded cheese. Continue to stir frequently as they cook.
- After the cheese has begun to melt, add the spinach to the mixture and continue stirring.
- Finally, add the diced tomatoes once the spinach has begun to cook down. You can add them earlier, but we found that it makes the eggs have a 'watery' layer to them which is not the case if added later to the cooking process.
Notes
For the shredded cheese, I prefer to use a blend of cheeses. Asiago cheese is a favorite with my family and I will sometimes do half asiago and half sharp cheddar. Fontina cheese is another one that the boys adore.
I also make this without diced ham, serving bacon on the side if desired.

I adore tomatoes, too, Dawn. I made an omelet version of this for my lunch yesterday and put a bunch of sliced heirloom tomato and steamed kale on the side. Truly a veggie packed meal!

Fred Meyer’s (Kroger brand of stores) sells the most fabulous ham around the holidays. It is a big pricey (around $8 a pound full price), but I can often find it on clearance a week or so after the big holiday. When I do, I buy a few and we stock the freezer. So, the chunks were from my husband cutting up the ‘butt’ end of the ham which wasn’t spiral sliced. It is very convenient to have a bag in the freezer ready to go!
This sounds fantastic! I love adding veggies in my scrambled eggs. I love this time of year with all the farmers markets that are going on.
I loved farmer’s markets when we lived in the ‘lower 48’. Up here in Alaska, the farmers markets charge an arm and a leg. So, I’m either buying at the big box stores (e.g. Costco), on sale at the grocery stores, or now am part of a buying co-op where the organic produce works out to be a bit cheaper than the local store.
