5 Quick and Easy Meatless Dishes for Lent and Beyond

Here is it another Friday in Lent and that means NO meat in our house. While my family is blessed with the opportunity to attend a Soup and Stations event every Friday in Lent, I know that not everyone has their Friday dinner ‘planned’ for them. So, I’ve pulled together 5 Quick and Easy Meatless Dishes that can be used in Lent or beyond.
A few of these recipes were originally published by me while the others are from a few bloggers I know who gave me permission to share with you. I am seriously thinking about having a few extra meatless meals that do NOT fall on a Friday now.
5 Quick and Easy Meatless Dishes for Lent and Beyond

Easy Weeknight Lasagna in the Slow Cooker is from my friend Wendy at Around My Family Table. I love that it is only a few ingredients with a couple of minutes to prep and then you can enjoy a hearty meal. I’m thinking my boys could all handle this one!
Pasta With Creamy Broccoli Pesto Sauce is from my friend Erica over at This Flourishing Life and is (gluten/dairy/soy/corn/egg free)
Spinach & Tortellini Soup is another recipe from Wendy and looks fantastic. We’ll have cold weather here in Alaska for a while still, so this will be on the menu soon.
Heading UP from the soup, is my Tuna and Spaghetti which we love to make for a lunch here. Finally, I have my ‘special’ dinner night meal of Shrimp & Peppers with Spinach.
