Sautéed Zucchini and Squash

One of the easy to make side dishes I absolutely adore during the summer months is sautéed zucchini and squash.  It is so easy and quite yummy.

Now, I will share that the boys are not as fond of this side dish like I am.  

So, for our recent dinner they had mixed vegetables instead.  That just meant more sautéed zucchini and squash for me!

Just a few ingredients for sautéed zucchini and squash

Sautéed Zucchini and Squash
Yield: 2

Sautéed Zucchini and Squash

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 1 zucchini
  • 1 summer squash
  • 1/4 onion, chopped
  • 3 to 4 cloves of garlic, minced or crushed
  • olive oil

Instructions

  1. In a skillet, saute the garlic and onion for a few minutes.
  2. Add zucchini and summer squash and cook for several minutes.
  3. Top with a dash of salt and pepper or some romano cheese.

Notes

I have been known to add slivered carrots as well as diced tomatoes to the mix for a more vibrant side dish. You can add more seasoning beyond a little salt and pepper to taste.

  1. These look SO good! I am going to pass this on to a friend who is having such an abundant zucchini and yellow squash harvest from her garden this year. Thanks for linking up with “Try a New Recipe Tuesday.” I hope you will be able to join us again this week. Ladies, I ask for your prayers. My minivan, which is only 7 years old and only has 50,000 miles on it is done. The engine is caput. We cannot afford thousands of dollars for a new engine, let alone to buy another van. I am just devastated. Trying to keep calm, but I just don’t know what we’re going to do, thus asking for your prayers.
