Roast Pork with Pears and Craisins

I started the year with every intention to do a recipe at least twice a month if not weekly.  But, life got in the way and I was busy with a flurry of homeschool related posts instead.  Today, though, I’m sharing Roast Pork with Pears and Craisins as a great dish for the cold weather.  Scroll down past the recipe to see other bloggers who’ve taken the challenge to cook with pears this week.

 

Roasted Pork with Pears and Craisins

Roast Pork with Pears and Craisins

Prep Time: 5 minutes
Cook Time: 1 hour

Ingredients

  • 1 pork roast (sized for your family)
  • salt
  • pepper
  • olive oil
  • 1/2 onion, diced
  • 2 to 3 pears, washed and sliced (not too thin!)
  • 1/4 to 1/3 cup craisins OR cranberries

Instructions

  1. In an oven proof container, heat enough olive oil to coat the pan. Add onions and cook for a few minutes, stirring often. Push the cooked onion to the sides of the pan and then sear all sides of the pork roast.
  2. Once all sides are seared, cover the roast with the onions, pear slices, and craisins (or cranberries.) Tent with aluminum foil and bake at 350 degrees until done.
  3. Slice the pork and top slices with the onion and fruit mixture to serve.

Notes

If you do not have pears, you can substitute with apples. I wash the fruit, but do not peel off the skin. Either craisins or cranberries can be used for the tart 'kick'.

How long the roast needs to bake is dependent upon its weight.
