I LOVE to do these posts and am planning to share at least one recipe a month if not on a weekly basis with my readers. After all, we all need to eat and why not share what’s getting serious thumbs up from my boys. So, here are the Top 10 Recipe Posts of 2013 for Day by Day in Our World based on pageviews. #10 Lentil Soup ~ Great Meatless Dish for Lent or Beyond
With winter here, this is a dish I plan to serve up often. Lentils are a great protein source and this soup coupled with a salad and crusty bread makes a wonderful lunch or dinner. While I make this at least a few times during Lent, my family enjoys it year round whether I need to curb our grocery budget for meat expenditures or just want to have something vegetarian for a change.
#9 Homemade Stuffed Crust Pizza
Ever since I started making this with either pepperoni & cheese or just cheese in the stuffed crust section, my boys expect me to make it for every single pizza night. This is one pizza that hasn’t lost its charm with them and it is SO easy to do. Plus, it is a great way to save money when you have a lot of hungry kids to feed.
#8 Shrimp with Peppers and Spinach
I do not make this dish often between the expense of purchasing shrimp and the fact my eldest son can’t (or won’t) eat crustaceans. Otherwise, the family and I would LOVE to have this on a semi-regular basis as it is super easy to make and really delicious. The nice thing for not having it often is that I can prepare this dish for a more special occasion (e.g. date night!) and still not completely brake the bank.
#7 Garlic Herb Pizza Crust
When it comes to making pizza at home this is hands-down the boys’ favorite pizza crust recipe. It works great for a plain cheese pizza as well as the old standby of pepperoni. I’ve also used the dough to make breadsticks (just brush a little butter on top to keep them from drying out!)
#6 Coffee Infused Recipes Using International Delight Light Iced Coffee
This post packs THREE recipes in it: Mocha Frappucino, Coffee House Chocolate Strawberry Parfait, and Coffee House Chocolate Chip Pecan Muffins. They are ALL super yummy and even my boys who are not big coffee fans will gobble them up.
#5 Mexican Chicken and Rice Casserole
This particular post is almost 2 years old, but is still hitting the top 10. My guess is that the combination of it being easy to make and family friendly is what contributes to it being in the #5 spot for pageviews during 2013. The boys love this and I like having a go to dish that can use up leftover chicken with little extra cooking time.
#4 Chicken Taco Soup
This is another dish that will be made several times this winter. It’s got a mild enough spice that it is loved by all the boys (and those that like it spicy can doctor it up with some diced jalapenos) and it warms you up on a cold winter’s night. I’ve made it in the pressure cooker (so quick to make), but it could be made on the stove or in the crockpot.
#3 Eggplant Parmesan, Great Meatless Italian Dish
Eggplant Parmesan is a dish that I do not make often between the challenge of finding a good eggplant that isn’t outrageously expensive here in Alaska and the fact that hubby and I are the ones that love the dish. It is great for those nights when meat needs to be off the menu and the boys will usually just have a different vegetable with their pasta. Like the Mexican Chicken and Rice Casserole, this recipe was published in early 2012 yet continues to be popular.
#2 Rich and Creamy Ham and Kale Casserole
This is the only dish I’ve made so far that contains kale which the boys normally shun. However, they loved this rather rich casserole. It’s a great way to sneak in a superfood as well as use up any ham leftovers you have in the house. I’ve also found it to be a great dish for potlucks.
and the #1 recipe post for 2013 is…Crock-pot Red Beans and Rice!
The boys were NOT surprised that this dish would be #1 for pageviews. It is a dish we have at least 6 or 7 times a year. I’ve heard back from friends who have made it and had it become a hit in their own homes. I love the ease of making it in the crockpot plus you can easily keep it vegetarian by not adding sausage at the end.
