Continuing the cookie theme… The other cookies we made for the Cub Scout cookie exchange were pizzelles. We were given a pizzelle maker a few years ago for Christmas, but it sat in the box for a while. P made some with Zia Felicia when we were in Louisiana this fall and started
bugging begging to make them here. He couldn’t find the recipe she gave him, so we used the one that came with the machine.
They weren’t perfect. Matter of fact the first ones baked had no sugar (as I’d forgotten to add it to the mix until I started baking.) They got me thinking that we could use this little baking machine to make WW crackers…
Anyways, right before baking these up I saw a reply to my sister’s Facebook post about making some at her house. One of her friends had posted a HEALTHY version on her blog, Wellness Without Pity. We didn’t have any OJ mixed up and ready to go, but we did use whole wheat pastry flour instead of regular flour. (We also did lemon extract instead of vanilla or almond extract. ) I just need to whip up some OJ this week and we’ll be giving her recipe a whirl.
Sadly, the poor pizzelles got dropped on the way into the meeting and became the perfect ice cream toppers. Sure hope the fireman enjoy the batch!
