What goes good with ice cream? Brownies, of course! Per their request, I made double chocolate brownies with chocolate mint icing that uses some boxed items for speed.
Making Double Chocolate Brownies with Chocolate Mint Icing
While I do want to start making more things from scratch, I have yet to do so for brownies. It is hard to pass up buying a few boxes when they go on super sale at the store. Plus, my older boys are capable of baking up a batch when needed.
Chocolate is something we love in our house and the simple addition of semi-sweet chocolate chips to the brownie mix yields a super rich double chocolate brownie. Baking in a brownie pan ensures more even sized brownies and everyone gets an edge!
Mint is a flavor which helps to provide a lightness to such a rich recipe. I used the same approach to making the chocolate mint icing as described in my super easy whipped mint frosting post. The change I made was using less whipped topping to the amount of dark chocolate icing. And, I discovered that you need to pop the whipped icing into the refrigerator for about 30 minutes to firm up a little before spreading.
These double chocolate brownies with chocolate mint icing are heavenly on their own and quite rich. However, for something more spectacular you can serve with ice cream and an array of toppings. This is how I added almonds to my own dessert without trying to keep track of which brownies had nuts and which did not.
