If you were to talk to the boys, they’d say that no trip to Louisiana would be complete without beignets.
The place we used to visit in the railroad station went out of business, but there are a few others in my hometown which have opened up since our last visit. The boys lamented that I only bought a few servings of mini ones to share one afternoon.
Papa decided they needed SUGAR before boarding the plane home and the New Orleans International Airport had a small food court area near the ticketing areas where you could get your beignet fix.
For part of the long journey home, they
went on for hours about discussed wanting to open a beignet and pizza shop where they’d offer discounts for family members. They’d make the beignets and I’d be in charge of the homemade pizza. Glad to know they think my pizza is worthy of selling to the masses!
Maybe when the holidays are over we’ll try our hand at homemade beignets…..
